Soon you may be able to judge the quality of a restaurant by the size of the explosions coming from its kitchen. Strange? No. Agricultural researchers in the U.S. have discovered that if you want to make meat tender(嫩的), the best way is to blow it up.

As we all know, a great quality dish starts with a great fresh cut of meat. So people usually choose a cut that does not contain fat and then place the meat on the racks and leave enough room between pieces to allow air to flow around the meat. In a restaurant, if a cook wants to soften meat, he usually hits it with a special hammer. Hit it long and hard. This works fine with small pieces, but if there is a lot of meat to soften it can be very time-consuming, not to mention tiring.

A new method suggests putting meat on a steel plate at the bottom of a water-filled barrel. A bit of dynamite(炸藥) is then put inside the barrel and exploded. The water transmits the explosive shock wave through the meat, breaking down the muscle and connective tissue that make meat tough.

Amazingly, the explosion not only softens the meat but also kills off bacteria(細(xì)菌) in the meat. Tests show that bacteria levels are reduced by the explosion to only one-thousandth of their original level. The only problem left for restaurants is how to keep the loud explosions from scaring away their customers.

Five years ago, Steven Gerrard fulfilled a boyhood dream when he was made captain of   Liverpool, the football club he   had supported all his life. As one of the best teams in the English Premier League, the captain's armband weighed heavy on a player who had only turned 23.

But through a combination of individual brilliance on the pitch (球場(chǎng)) and a growing awareness of what being a skipper (隊(duì)長(zhǎng)) is all about, Gerrard has gone on to make the captain's role his own.

He performed a rescue act for Liverpool by twice scoring as they came from 2-0 down to draw 2-2 against Hull City on December 13.His efforts steered (帶領(lǐng)) the team to the top of the Premier League. “It's  easy for me to say we're a great team  and the squad's great,” said Gerrard.  “The hardest thing is to actually go out there and prove it on the pitch. I call the Premier League the bread and butter and I'm desperate for the title.”

Liverpool enjoyed some real success during the five years when Gerrard has been captain of the club—they've been to two Champions League finals and an FA Cup final, winning two out of three. But Gerrard believes he has learned more from being a captain “when things haven't gone too well”.

“You learn more from bad experiences really. Bad defeats, going out of competitions or failing short in the league, as captain, I feel more responsible, particularly when we get beaten,” he said. “I remember all those experiences and learn from all of that.”

Gerrard grew up watching Liverpool. He joined the club's youth academy as a school boy. He then had tryouts with various clubs at 14, including Manchester United, which he claimed in his autobiography (自傳) was “to pressure Liverpool into giving me a contract.” He signed with the club in 1997.

Gerrard has dedicated his entire career to Liverpool and he is confident that the club will start another legend soon. “You just expect that dynasty to come,” he said.

Nothing succeeds like confidence. When you are truly confident, it radiates (輻射) from you like sunlight, and attracts success to you like a magnet (磁鐵). Besides, those who are self-confident can in turn inspire (encourage) confidence in others: their audience, their peers, their bosses, their customers, and their friends. And gaining the confidence of others is one of the key ways in which a self-confident person finds success.
So how can we build a sense of self-confidence and prepare ourselves on the way to success?
First, do what you believe to be right, even if others mock or criticize you for it. Believe in yourself and believe that you can do it in any situations, because if you believe you can, then you really will. The belief keeps you searching for answers, which means that pretty soon you will get them.
Second, govern your behavior based on what other people think. What’s more important, be willing to take risks and go the extra miles to achieve better results, in which case mistakes can not be avoided. Always be ready to admit your mistakes, and learn from them. Next, work hard to settle the problems in order to cover up your mistakes before anyone notices. Building self-confidence is readily achievable, as long as you have the focus and determination to carry things through. And what’s even better is that the things you’ll do to build self-confidence will also build success -- after all, your confidence will come from real, solid achievement. No one can take this away from you!
As you sow, so will you reap. With your perseverance (毅力) and improvement, you are getting closer to success. At this stage, wait for others to give congratulations and compliments on your achievements. “Thanks, I really worked hard on it. I’m pleased you recognize my efforts.” The congratulations and compliments from others will promote you to gain further success.
Self-confidence is extremely important in almost every aspect of our lives, and it is no wonder that so many people struggle to find it. Self-confidence really can be learned and built on. Besides, whether you’re working on your own self-confidence or building the confidence of people around you, it’s well worth the effort!
